HONEY: is the sweet substance produced by bees from the nectar of flowers. It is sold in liquid or creamed form and in combs.
Different flavors of honey exist according to the type of flower foraged: CLOVER, APPLE BLOSSOM, BASSWOOD, WILD FLOWERS, and BUCKWHEAT. Each type of honey has its own distinguishing aroma, taste and color.
Liquid honey: Keep at room temperature on your kitchen counter or cabinet.
Creamed honey: Store in a cool area.
Honey crystallization is a natural phenomenon rather than an indication of spoiled honey. During crystallization, it keeps its medicinal and nutritional qualities and its flavor.
If you prefer liquid honey:
Heat your closed container of honey in a pot of hot water, maximum temperature 40°C or 104° F.
- Heat water in a pot until the water is almost boiling and then remove the pot from the heat.
- After a few minutes, place your container of honey closed with its lid, in the heated water, the water should be level with the honey, and cover with pot lid.
- Let rest until the crystals are dissolved. You can also loosen the honey container's cap from time to time to relieve built-up pressure.
Honey kept in an airtight jar at the right level of humidity will never spoil. Honey was even found in an Egyptian tomb and it was still edible.
BENEFITS and NUTRITIONAL VALUE of HONEY:
The sweetening power of honey is twice as powerful as that of sugar while containing fewer calories. One teaspoon of honey contains 65 calories. Honey is energizing and is quickly assimilated by the body. It contains glucose and fructose as well as enzymes, vitamins and minerals such as iron and calcium. Honey and its derivatives (pollen, royal jelly, and propolis) are recognized for their therapeutic properties. It is a nutritive source of antioxidants, mostly flavonoids.
BEE POLLEN: is rich in proteins, vitamins, minerals and enzymes. It contains antioxidants, amino acids, trace elements. Excellent energy enhancer, strengthen the immune and digestive system. Take 1 to 2 tsp at breakfast in your smoothies, cereals, yogurt or juice.
TIPS FOR COOKING RECIPES:
You can substitute: 1 cup of sugar with 2/3 of a cup of honey.
For oven baking with honey: lower the temperature by 25° F.
N.B. decrease the amount of liquids in your recipe by 1/4 of a cup for every cup of sugar replaced since honey is 20% water.
